I was supposed to go to the grocery store today to restock my kitchen, but I wasn’t feeling up to it. When it came to planning dinner I was stuck with the few items I had left in the fridge, and it suddenly dawned on me I had the makings for some Cheesy Bacon Bombs.
I also had some thinly sliced Honeyed Ham left over so I went ahead and wrapped my mozzarella in ham and added a dash of honey mustard before stashing it away inside it’s biscuit covering. I should probably note, that while some recipes call for deep frying these savory treats, I prefer to bake mine instead. and give the bacon a slight covering of brown sugar. The effect is essentially the same, but perhaps a tiny bit healthier and sweeter my way.
Seems like the perfect finger food for a Rainy Monday night watching my shows on TV.
